Levantine Hill Pinot Noir is an assemblage of multiple small batches of fruit from the winery's Maroondah Highway vineyard. It blends MV6 and D2V5 clone Pinot Noir.
The grapes are handpicked over a week, then hand sorted. They are destemmed to small open vats, with the stalks returned to some parcels to add complexity.
Fermentation occurs with a mix of natural and inoculated yeasts. The must remains on skins for 1-3 weeks with hand plunging once a day at maximum for gentle extraction and integration of tannins.
The wine then matures in French oak barrels – predominantly small barriques – of which one third are new.
Deep crimson, Levantine Hill Pinot Noir has intense 'Pinosity', unfurling red fruits and spice with a fine acid line and silken texture. Cellaring potential is 10 years.
